IT’S A TUNA WRAP!

Olav has kept a record of the number of hours of sleep we get in every 24 hour period. It works out to be between 4.5 and 5.5 hours. It may be enough rest for Napoleon, Margaret Thatcher and Jo our skipper; but not for Olav and me. With this tough and unusual maritime regime it’s important to eat well to kept energy levels up and moral high.

The timings of the 3 & 4 hour shift patterns mean that every other day we start our first watch at 11 am. Lunch is then usually eaten late, around tea time. If you want to get a nap in before the evening shift there isn’t much time to prepare and cook lunch. Olav and I came up with this tuna wrap recipe as a good alternative to the usual nautical fare of beans on toast, ‘just add water’ pot noodles and marmite on toast.

Ingredients:

1/2 kilo of tuna steaks (fresh or canned)
3 ripe avocados
1/2 onion
1 clove garlic
2 celery sticks
bunch of coriander (cilantro)
bunch of parsley
1 clove of garlic
cayenne pepper
handful of dried persimmons or mango
juice of 2 green limes
sesame seed oil
salt and pepper

soft tortillas (corn or wheat)

mayonnaise & chipotle hot sauce to garnish

First, catch a tuna. Gut and cut the fish into steaks. Use fresh or canned if fisherman’s luck is not going your way.

Cut the tuna meat into cubes. Fry these in a pan with sesame seed oil. Salt and pepper to taste. Let the tuna cool. (If you are using cooked canned tuna skip this part.)

Mash the ripe avocados to a pulp and add lime juice. Finely chop dried fruits, garlic, onion, celery, coriander and parsley then add to avocado pulp in large bowl.

Mix in cooked tuna, mashing any large chunks with a fork. Add salt, pepper and cayenne to taste.

Fill six heated tortillas with as much mix as you fancy. Garnish with mayonnaise and hot sauce then wrap or roll each tortilla.
